Tree Tomatoes 

Sweet and Pickled













Ingredients

4 fresh, but not overly ripe tree tomatoes

200 gr sugar 

4 limes

2 pieces of star anise

1 whole cinnamon stick

1 whole vanilla pod

1 dl gin or changaa

The sirup 

Press the juice from the citrusfruits into a pot, Add the spices and the sugar, and bring everything to a boil.

Reduce until you reach a syrup consistency, then remove from the heat and wait a minute or two.

Add the gin and run your sirup through a fine sieve.

The tomatoes 

Use  a sharp potato speedpeeler to remove the tough skin of the fruit. Be careful not to cut into the fruit.

Cut the fruit in half. If you are careful, you can also cut the wooden top piece in half, allowing for a more attractive presentation.

Place the tomatoes side by side in a small heat resistant container or bowl, Pour  the syrup over the tomatoes. Make sure the syrup covers the fruit. Then cover the bowl or container with paper and place it in an oven at 160*c for 30 mins.

Remove from the oven and leave to cool down, 

Store it in a cool place for 24 hours to allow the tomatoes to pickle.

Serve with your preferred ice cream, and maybe try adding a little chili for an extra kick.
